The situation
Phones rang during service and after close, staff couldn’t keep up, reservations were missed, Spanish-speaking callers hit a wall, and hand-entered bookings had errors. The cost of a missed call is concrete: the case notes a 50% bounce rate for a guest who fails to make a reservation.
What the business did
Rodizio Grill deployed the voice agent for 24/7 answering, with reservations written straight into OpenTable and private events into Tripleseat. It runs bilingually. A “Smart Inbox” surfaces priority calls for staff, and automated email alerts go to every manager on urgent issues. Nick Utrera, VP of Operations, describes the change: if there’s a complaint or a food safety concern, “it’s not just sitting on one person’s plate that may be off that day.”
What happened
Over a 30-day window the agent handled 15,508 calls, 19% of them after hours, and booked 1,481 reservations, 16% outside business hours, with a 96% guest satisfaction score. The window is undated, no revenue figure is published, and the case doesn’t say whether all 23 locations were live.
Why it worked
The agent writes into the booking system, so an answered call becomes a reservation rather than a message someone has to return. It answers around the clock, including the calls that arrive while the host stand is busy, which is the failure mode no host stand can solve. Bilingual handling removed one specific reason calls were lost. The after-hours share (19% of calls, 16% of bookings) puts a number on the bookings a 9-to-close phone staff structurally misses.
The home services version
Superior Plumbing, in the Atlanta area, runs ServiceTitan’s AI voice agent, Piper, as its frontline call taker. ServiceTitan reports an 80% booking rate with a 30% escalation rate (70% booking when Piper is used as overflow), a customer service team reduced from six full-timers plus one part-timer to three full-timers, and the first Thanksgiving and Christmas in 40 years with no CSR on shift. Bonney Plumbing, which runs five brands, consolidated on a contact center platform with AI virtual agents for overflow and after-hours and reports its booking rate up from 35% to 41% and missed calls down from 10% to 4%; abandoned calls fell from 12% to 4% on the consolidated platform even before the virtual agents were added.
The cost and the catch
Forbes reported in October 2025 that a 14-location restaurant group pays about $450 per month per location for the service. One of its restaurants had more than 250 overlapping calls in a single week, which its business development director estimated at “about a thousand covers we would just lose without this platform.” The same article quotes Slang’s CEO on the friction: a year earlier 33% of guests tried to bypass the system immediately; by late 2025 that was closer to 22% to 25%. Some callers will always want a person, and the design has to let them reach one.
How we apply this at Position One
We build custom AI integrations for the front of the business: AI phone and chat agents connected to your booking system, CRM and VoIP stack (we design those stacks too), with escalation paths to a human, after-hours coverage, and reporting on calls answered, bookings made and revenue per booking. We start where the math is obvious, which is usually the after-hours and overlapping calls that currently go to voicemail.
